“People stay vegan because they’ve internalized the moral belief that it’s wrong to exploit and unnecessarily kill other animals in the same way they’ve internalized the moral belief that it’s wrong to exploit and unnecessarily kill children. For anyone who hasn’t internalized such a moral belief, they are an ex-vegan waiting to happen. They may stay vegan for life, but it will be only a matter of luck or community support that keeps them vegan, not their own convictions. OTOH, someone who has internalized strong moral convictions against exploitation and unnecessary killing will stay vegan in the face of all kinds of difficulties and lack of support.
